At this time of year the wails are about jams and jellies. While new recipes are always popping up, some readers want the old familiars. So here are what has been re- quested. EASY BLACK CURRANT JAM Pick over but do not remove blossom ends from enough black currants that are not overripe to make 3 full cups. Put into flat-bottomed kettle and crush with wooden masher, Add 2 cups water, bring to a full rolling boil and boil 3 min- utes. Add 5 cups sugar, stir to mix, bring to a full rolling boil and boil hard for 3 minutes. Pour into sterilized jars and cool at once. RASPBERRY AND CURRENT JAM Crush 8 cups red raspberries ‘in kettle and add 1 cup strained red currant juice. To make the juice heat the red currants until juice flows freely and put through a sieve. You can do the same with the raspberries to be less seedy. Bring to a simmer and simmer juice and pulp. and boil rapidly until it reaches the jelly stage. When sufficiently cooked it will sheet from edge of spoon. * takes a very few minutes to reach that stage. Pour into sterilized jars and cover with paraffin at once. Add another coating when cool. Wash and drain fruit; best done by dropping them a few at a time into a large kettle of fresn cold water and lifting them out carefully by hand. Do handie them carefully and see that they are well drained in cclander or large sieve. Pack berries into hot sterilized jars and fill to within an inch | of top with boiling hot syrup, | using 2 cups water to 1 cup sugar boiled 5 minutes. Allow % cup syrup for pint jars when fruit is ' packed raw, 34 cup fer quart jars. Now tighten the tops cf jars and place in a large vessel or , pressure canner, but don’t stack | the jars. Fill the tub or canner with cnough boiling water to come up over the jars 3 inches. | Cover with a heavy woolen blan- ket or rug and let stand cver- |: night, Do Not screw down tops again} or you will preak the seal.
