'FINGER PRINTS BEING RETAINED Records of More Than 'Iillion Service Yeople at Ottawa OTTAWA More than a mil lion sets cf finger prints of ser vice men and ex-service men reprsenting about half the male population of Canada between the ages cf 18 and 50 are presently on file In Ottawa with the Canadian Armed Forces Identification Bureau. SOUR MILK VALUABLE Warm weather may usher In the sour milk season, but a pint of sour cream or milk still is worth its weight in appetizing food, if the housewife has on hand a number of good "sout cream" recipes. TEA BISCUITS Ideal for the light summer supper are twice as fluffy and tasty when made with sour milk. Ingredients: Two cups flour, 2 and 2-3 teaspoons baking powder, 1-3 teaspoon soda, 2 tablespoons sugar, Vi teaspoon salt, 2 tablespoons fat, crisco, butter or beef dripping, 2-3 cup sour milk. Mix and sift the dry ingredi ents. Cut in the fat with a knife. Add the milk slowly until a soft dough is formed. Turrv on to a lightly floured board, and knead three or four times before rolling out about one-quarter of an inch in thickness. Cut with a cutter. Bake in a hot oven. Peaches, eaten from the hand or sliced and served with cream, cannot be beaten as a dessert but there are many other ways in which they may be served, both raw and cooked. Canned peaches are a standby in winter but on account of their tendency to discolor they require care in preparation lor canning. To prevent the peaches turn ing brown before they are pack ed in the sealers, drop the fruit, as It ls peeled, in a brine bath. Heme economists recommend one teaspoon of salt to each quart of water for this bath and they say that only sufficient fruit to fill two. or .three -seali3 fhould be prepared at one time. Long standing in the brine bath will give the peaches a salty taste. The Experts Say ' For an easy way to can peaches for use later in pies, puddings and frozen desserts, the experts recommend .the Solid Pack Method. The peaches may be canned by this method either with or without sugar. Many hememokers will be preparing peaches for freezing so the following directions should prove of interest. Even if one hasn't storage space for canned or frozen peaches, tlere Is usually seme place to itore a few jars of delicious peach Jam. Peach Jam 12 cups peaches cut in pieces 6 cups sugar 1 tablespoon vinegar or lemon uice. Wash, blanch 15 to SO seconds and cold dip the peaches. Re move skins, pit and cut in pieces. Measure fruit and add sugar. Let stand 1 hour. Add vinegar or lemon juice. Bring to boil and cook uncovered 15 to 20 minutes or until jam .stage Is reached. Yield approximately 9 cups. Peaches make a better jam if extra acid, is added, that Is whv the heme economists reccm mend this jam recipe. Freezing Teaches Choose firm, ripe fruit, blanch 30-60 seconds, dip In cold water I remove skins and pits. Slice fruit directly into syrup in con tainers. Use cold, moderately. thin syrup (f cup sugar to l'i cups water) to cover. Ascorbic acid added to the syrup is effec tive in preventing such discoloration. 200 milligrams to 1 cup of syrup is Considered a sufficient quantity. The tablets should be crwshed and the pow der stirred into the syrup. This adds to the cost but helps to retain the clear natural color.
