What a pleasant discovery It was when this queen of horti cultural splendor was found to be edible and healthful as well as beautiful to look at. This one fruit seemed to blend with protein foods so it was usually served with the meat course, thus today tomatoes are often classed as vegetables rather than fruits. People usually prefer fruits while they are fresh but tomatoes retain most of the natural raw flavor when canned. From a health standpoint tomatoes rate high. Being one of our best Canadian sources of vitamin C, a glass of tomato Juice, served as an appetizer or as the beverage with a salad or sandwich lunch, adds not only flavor but also vitamins and mineras. Taking the average of many asseys on tomato Juice and to matoes canned it is found that a five-ounce glass of Juice or 23 cup (five and a third ounces) of canned tomatoes, would provide approximately Va of the daily requirement of ascorbic acid, So tomatoes pay dividends not only when served raw, but when served canned or as tomato Juice. Home economists recommend home canning of tomatoes, which because of their acidity do not! require such long processing times as other non-acid vege tables. Following are some tested recipes for fresh tomatoes recommended by the experts. STRIPPED BOUILLON First layer 1 cup chopped tomatoes Vz small onion, sliced 3 cloves dash of thyme Vi teaspoon celery seed 3 cups chicken stock Vz tablespoons, gelatine V cup cold water Second layer 3 cups bouillon 1 V2 tablespoons gelatine A cup cold water SPRED is here! Simmer 20 minutes. Strain through wet cheesecloth. Add gelatine which has been soaked in cold water. Stir into large shallow pan which has been greased lightly or rinsed in cold water. Mixture should fill pan to a depth of one inch. Chill until set and add second layer. Second layer Heat bouillon to boiling point. Add gelatine which has been soaked in cold water. Stir until thoroughly dissolved. Cool and pour over first layer. Chill until set. To serve, cut in cubes or ribbons and garnish with cream which has been whipped and seasoned to taste with prepared horseradish and salt. Yield: six servings.
