It is a pleasure for us to give an opinion on a loaf equal to that sent in from Mr. Andrew's shop. At times, we get the reputation of being too harsh in our criticism of bread but in this case there is very little to criticise. The loaf has good appearance. It is, well baked with a good' bloom on the crust. The color and texture are excellent. Eating qualities, first class. The fermentation of the dough has been just about right. Wc would hesitate to suggest any change of formula or method as wc doubt very much that any suggestion wc could make would result in better bread than Mr. Andrew is now making.
