It Contains only the Finest Teas 7 MY KITCHEN NOTEBOOK by 7Kany.72laJCt. Domcitic ScUnc Connialor My Secret for Finer Textured Cakes I must confess that I haven't always been successful in the making of cake. 1 suspect that I possessed more zeal than skill thorougliness rather than deftness. But when I learned to exer-ciK my brating pnidivities at the start in the crsamir.j- together of butter and sugar, and to exhibit restraint at the finish by stirring i:nly a moment after the Anal ingredients were added, my cakes improved. But the greater improvement I have ever made in cakes has been through the uk of Carnation Milk. Besides being evaporated to double richness and rteriii;..'d for safekeepirs, it i " homogenized," the cream content brokra up into minute particles and distributed thvnughout every drop. As a result, cakes are not only rich with this unii'pri.ilydjstribirted. double share of cream, but because of the fineness of the particles the texture is exceptionally snvnth, fragile and fine. Carnatiun gives similar results in all cookery, a creamy smoothness to sauce:., candies and ice cream, a richness to sour, and a delicate texture to puddings, u-.'.e and waffles that even the beat of bottled milk cannot equal. Try this convi ment, economical and dependable torn if milk - -it's just pure whole milk with about lalf the natural water removed and nothing added. Last, sift in rest of flour, baking powder, salt and cinnamon; add diluted milk and flavor ing all at once; stir vigorously for 1H minutes. Pour batter immediately into pan which has been oiled and dusted with thin film of flour. Place in 300F. (slow) oven for first 10 minutes, then elevate to 375F. (moderate). Bake about 45 minutes. When done it shrinks from sides of pan and springs up when pressed with finger. Remove from the pan, cool and ice with Carnation Icing. Carnation Icing 1 M cups confectioners' sugar, 1 tbsp. butter, 2 tbsp. Carnation Milk. tsp. vanilla. Cream butter and sifted sugar, add Carnation and vanilla. Beat thoroughly and spread on cake.
