When buying beets remember that medium sized ones are less likely to be tough and woody than are the large or very small ones. Beets should be smooth and free from blemish. Those that have deep growth cracks are wasteful and may be tougli and woody. Soft, flabby or shrivelled beets are wasteful. , Parsnips are truly winter vegetables and the flavor is not fully developed unless they have been exposed to a temperature near freezing.
