August 15, 1939. EDITORIALS COOKING ' Bruce Hutchison recently published an article on cooking in which he bewailed the fact that Canada had no distinctive Canadian dish. There was no oriijinality in ' Canadian food, he said. He contrasted this with England where, according to his version, they ate soggy potatoe? and Brussells .sprouts and throve in spite of their cooking. To make up for this England had developed Shakespeare and Keats whereas Canada had no national genius to offset the mediocre cooking. We feel that we must come to the defence -of the English cooking. It is true that they eat suet puddings which are probably very indigestible but not more so than many of the concoctions served at midnight in this country. However, we deny the tough beef and the soggv potatoes The pride of the English housewife is the wonderful fluffy potatoes that come steaming to the table with the tender round of beef.
