On the PaclH : coast there are large stocks of round frozen chum salmon, a comparatively cheap fish for which there Is no great demand -dn the frozen ondition. Method of Curing Fresh coho and fchum salmon were split and trimmed in the or- Unary way, all of Ihe bones be ing removed. The coho salmon were not skinned before brining. However, after 14 hours smoking the flesh next to the skin was found to be quite soft anc too moist, so the sides were then skinned and smoking resumed. As skinning these partially smok ed sides was attended with much difficulty owing to the drying out of the skin, the chum salmon were skinned before brining. This was found to be the more satisfactory procedure. The skinned sides wer ? then brined in saturated salt brine for 30 minutes, the brine being agitated gently from time to time.
