It's a great comfort t know when you come home late from the Red Cross, for instance that there is a savoury beefsteak and kidney pie all ready to pop into the oven, while it cocks you can fix your face, change your dress and set the table. It would be nice, if you had a little extra time, to have a hot leafy green vegetable to go with it: but if this is impossible, a green salad with emphasis on watercress would complete a fine nutritionally valuable meal. Now here's what you do Ihe evening before to make all this possible: Soak a i veal or beef kidney in cold salted water for 30 minutes. Meanwhile, cut 1 lb. (or as much as you can spare from your ration) of beef chuck or round steak into neat pieces. Slice an onion and brown slowly in saved meat dripping or lard. Now drain the kidney, remove tubes and membranes and cut into Vi-inch 6j Martha Ltgait Beefsteak and Kidney Pie cubes. Add meats to the browning; onion and brown well on all sides Cover with boiling water or stock.. Add 1 teaspoon Worcester Sauce pinch of thyme, savoury, marjoram or poultry dressing salt and pepper. Simmer covered for two h6"Urs. Thicken liquid with flour blended to smooth consistency with cold' liquid. Transfer to baking dish. Coyer top with flaky pastry with eyelets cut for escape of steam . . i 30 minutes in a 375 oven and the pie is ready to serve. Note: suitable vegetables may be added.
