SORRY - - PAGE THRj! these valuable hints' each Monday by Martha Ugan Glamourize Meat Loaves No mailer what else your meat market doesn't have, chances are there'll be the makin's of a meat loaf What's in a meat loaf? Well, that's up to .you; but take it from me, a meat loaf can be a rare and elegant thing with a bit of thought and planning. Take shape for instance. Everyone likes variety, so make the Joaf different every time. Meat loaf in a ring mold with the centre full of buttered peas or creamed celery is a sight to start mouths watering. j Then the flavour, that's up to you again. Some folks like to sea-son the mixture with sage or other herbs. Then others like a dash of LUNCH BOX CONTENTS . . . should include 1. milk in some form (soup or cocoa or ' straight); 2. meat, fish or egg; 3. Canada Approved bread; 4. a leafy green or yellow rege. Uble and 5. a fruit . . . these as a minimum. Worcester or horseradish. And ; don't think a meat loaf must be 100. per cent beef! Try mixing ground beef with the same amount of ground heart. (That's putting extra nutrition into the meal, too.) And don't be afraid of other meats (veaL pork or lamb) which may be available. Or the leftover meats in your refrigerator. As to texture, some like a dry loaf, some a moist one. The secret lies in the bread crumbs. Fine crumbs makea compact loaf need more liquid to avoid dryness. And one last hint. When the meat loaf is cold it is excellent sliced between mustard-buttered slices of Canada Approved bread for a tasty and sustaining lunch-box sandwich. Have you your copy of "Meat Complete" yet?
