Saute the celery and the onion In two tablespoons of the fat for a few minutes. Add the bread crumbs and season with salt and pepper. Pound and flatten steak. Spread with dressing and, begin ning at one side of the steak, roll up like a jelly roll and tie securely in several places with string. Brown in the other two table spoons or rat in a neavy irying or roasting pan on the top of the stove, turning the meat until it Is browned on all sides.
