The Experts Say - - CAREFUL WITH PRESSURE' COOKERS Many queries have been coming in as to whether it is all right to do home canning in a pressure sauce-pan. The answer is "No," unless the manu facturer gives specific dlrec - tions for doing so. It is necessary to have a cook er with a gauge which registers the pressure accurately for proper processing under pressure. It is also necessary to maintain the same pressure for a given length of time. The type of uten sil satisfactory for canning Is usually sold as a pressure cooker or pressure canner, while the small pressure Suuce-pan with- out a gauge Is suitable for quick cooking of meat and vegetables for immediate use. When processing either In th? pressure canner, water bath or thermostatically-controlled oven be a clock watcher. Be sure to allow full process lng time. Count the time from the minute the' gauge oh the' pressure canner registers the re quired pressure or, if using the water bath, from the time tht water In the bath starts boiling vigorously, or when the tempera ture of the oven returns, to 275 degrees fahrenheit. The length of time for processing depends on the method used and varies with different foods. A table giving exact times for each Is given in the bulletin, Home Canning, sent' free on request by the Dominion agriculture department. FRESH VEGETABLES Many of the vegetables now coming into season haw? a sweetness and succulence that cannot be preserved for later use so they should be fully enjoyed right now. Others which will store well when mature are more tende when young and the flavor is more delicate. Carrots and peas are food twins that are as Inseparable as ham and eggs or liver and bacon.
