When shopping avoid buying potatoes with deep eyes and knobs. There's a lot of waste and they take longer to peel than well-shaped potatoes with a, few shallow eyes. If you haven't a cool, dark place for storing potatoes don't buy more than you can handle conveniently before they begin to shrivel or sprout. To gtt the most from your pot atoes cook them In their Jackets which may be quickly removed immediately-after the potatoes have been drained. To dry them out place them over low heat for a few minutes. Bakin'g is another way to cut down on cooking losses and bak cd potatoes are favorites with practically everyone.
