Add beaten egg, then potatoes, carrots and fruit. Mix and sift flour salt and spices and ad to first mixture alternately with water in which soda has beeiudissolved. Blend well. Cook over boiling water until smooth and thick ened, stirring constantly. Just before serving (while still hot) add orange juice and rind and pour mixture slowly over stiffly beaten egg white. Blend well and serve Immediately. Makes about l'A cups sauce. Cherry Sauce 1 tablespoon cornstarch 1 teaspoon butter 1 cup warm water 1 cup hot cherry juice V2 teaspoon almond extract 12 cup pitted canned cherries Combine cornstarch and butter: add water gradually Bring to boll. Boll 5 minutes. Add hot cherry juice. Simmer gently 10 minutes. Add almond extract and cherries. Serve hot. Makes 2 cups. Brown Sugar Sauce 34 cup brown sugar 3 tablespoons flour Few grains salt cup cold water IV2 cups boiling water 1V2 tablespoons butter V2 teaspoon vanlila Few grains nutmeg Blend sugar and flour thorough ly. Add salt and cold water, mix ing well. Add boiling water and cook over direct heat for 5 min utes, stirring constantly to pre vent burning. Place over boiling water and cook for 10 minute3 longer. Add butter, vanilla and nutmeg. Makes 1SA cups sauce. Mincemeat 3 cups apples, chopped 2 cups raisins, chopped 3 tablespoons lemon or other fruit juice Vt cup water or cider Va cup mixed peel, chopped V2 cup sugar V2 teaspoon ground cloves V2 teaspoon nutmeg 1 teaspoon cinnamon Vz cup chopped suet OR V4 cup mild-flavored fat, melt ed Combine Ingredients and heat together slowly. Simmer about 10 minutes, bottle and store in a cool place. Makes about 4 cups.
