The nurse Is 33-year-old Su san Travers of Folkestone, daughter of a Royal Navy cap tain, who enlisted with a French ambulance unit on the out break of war and has served with the Fighting French In Finland, Dakar, Syria as well as North Africa. During the North African cam paign she was ordered from Blr Hachlem with the rest of the women Just before the garrison was completely surrounded. Later when an urgent ap peal lor nurses went out Irom the French forces she made her way back, through enemy lines. When the French forces made their break through, she drove the general pursued by enemy snipers. When she reached Allied lines there were 11 bullet holes in her car. The answer Is that vitamin Bl is a Victory foodstuff. It will help your war effort because it will make you keener, more efficient more skilfull and better able to do your Job. It will give you that extra energy you need to do your Red Cross work, to assist in the Victory Loan drive, to dig your Vfctory'garden. Vitamin Bl is the vitamin that affects your nervous system, Without It you may become list less and Irritable and feel that life is a burden. Every person needs to eat vitamin Bl regularly. Eighty-nine percent of Prince Rupert children in the recent survey were found to have a 'diet deficient in this vitamin. Vitamin Bl is found most abundantly in the bran and geim of wheat. Refined cereals and white flour do not contain these parts of wheat so we must eat whole grain cereals and bread. We should go back to the good old-fashioned porridge made from oatmeal, rolled oats, rolled wheat and cracked wheat. Packaged ready-to-eat cereals have very little food value. We should make a habit of eating whole wheat and brown bread. Recently we have been hearing about Canada Approved flour this is not a new brand of flour, but Is a government grade assuring you that the necessary vitamin Bl has been retained in the flour. This Is being used extensively throughout Canada. The Prince Rupert Nutrition Committee has Investigated the supply of Canada Approved bread and flour in this city. It was found that one of the local bakeries Is using two parts Can ada Approved flour to one part ordinary Hour the other bakery is using no Canada Approved flour at all. The committee also visited many of .the local grocers and asked why they did not sell Canada Approved flour. The grocers' reply was: "You educate the women of Prince Rupert to buy Canada Approved flour and well stock it." Canada Approved flour will keep no longer than 3 months due to the fat in the wheat germ. Therefore, there must be a quick turnover of this flour in the stores. So, homemakers of Prince Rupert, it is up to you. If you demand Canada Approved flout from your giocer and Canada Approved bread from your baker you will get it. By so doing you will have the satisfaction of knowing that you are doing what you can to lessen nervous strain and fatigue in your family. In the meantime buy whole wheat and brown bread whenever possible. Every person should eat at least four slices a day. Wheat germ is a valuable supplement. It can be bought for about twenty-five cents a package. It can be used in many ways. In flour mixtures such as muffins or oatmeal cookies replace V cup of flour with wheat germ, add two tablespoons to your cereal Just before serving, sprinkle It on fruit, mix it with filling in sandwiches, mix half and half with bread crumbs and use it in vegetable soups and tomato Juice. Vitamin Bl is also found in small amounts in milk, potatoes, pork, liver, eggs, dried beans and peas.
