E IN WARTIM of Flavours Make 3 tablespoons lemon Juice 3 tablespoons grated onion 3i teaspoon dry mustard 2 tablespoons Worcestershire, sauce Vi teaspoon curry powder 1 teaspoon salt lA teaspoon paprika 1 cup water Trim excess fat from pork chops and place them, in a dish. Combine remaining ingredients, pour over chops and allow to marinate for 1 hour., Drain chops, reserving the marinade. Wipe chops dry and brown in a hot greased skillet. Heat the marinade and pour around the chops. Reduce the heat and simmer chops, covered, until they are nearly tender. Uncover and continue cooking until done. Chops may be baked; covered, in a moderate oven, 350 deg. F, until tender, about 1 hour. Put meat through food chopper, using a minimum blade. Beat eggs and add to meat. Melt fat, add onion and saute until golden brown. Add to meat. Liver and Vegetable Casserole lVi pounds liver (beef, pork. or calves) 2 tablespoons flour 1 teaspoon salt Vt teaspoon pepper 2 tablespoons fat 1 medlunirslzed turnip, peeled and cubed (4 cups diced) 3 carrots, scraped and sliced (1 1-3 cups sliced) 1 onion, chopped (V2 cup) j cup celery, diced ' 1 small bay leaf HVcups boiling water Cut liver into 2-lnch squares. Combine flour, salt and pepper and roll liver in the mixture. Melt fat and saute liver until lightly browned. Remove liver from pan; add turnip, carrots, nnlon. ceierv. and bay. leaf to nan and brown slightly. Add boiling water and place In a casserole. Cover and bake in a moderate oven, 350 deg, F, for about 1 hour. Uncover, casserole for last half-hour, of cooking.
