Home Recipe Apple, drape, Quince, Crab-apple and Sour Plum Jelly 1 Wash and cut apples, crab-apples, plums, and quinces in pieces; do not peel or core. Wash grapes and remove stems. 2 Place fruit in preserving kettle and add enough water to be seen through the top layer of fruit. 3 Cook slowly until fruit Is soft and mushy and Juice is drawn out. Crush with a potato masher. 4 Drain several hours or overnight through a moist jelly bag. Squeezing the bag increases the yield of juice and gives a more pronounced na-vor but a less clear jelly. 5 Measure juice. Do not make up more than eight cups of juice at one time. 6 Measure 3,4 cup sugar for each cup of Juice and put sugar to warm. 7 Boil iuice eently for three minutes. Test for pectin. 0 When pectin test is obtained, add the heated suger. Boil rapidly, three to ten minutes, testing repeatedly until Jelly sheets from the spoon, 222 deg. F. 9 Remove from fire at once and skim. Pour into hot, sterilized glasses. Let stand, undisturbed, until set. 10 Pour a thin layer of melted paraffin wav over tne jeuy and allow to harden. Add a second thin layer of melted wax, rotating the Jar so that wax will adhere to the side of the glass, forming a close seal. Cover with brown paper or metal cover. 11 Label and store in a cool, dark, dry place. Norman A.
