It requires two cups of grated apples (four medium ap-, pies) one-half cup of fruit or fine granulated sugar and half a pint of whipping cream. Grate the unpeeled apples, and after grating a small amount of apple measure and sprinkle with part of the sugar to prevent discoloration. Con tinue grating until two cups of apple are measured. Whip the cream, fold Into the apple mixture and freeze. The same recipe may be used for apple charlotte, but the charlotte requires one and one- half tablespoons of gelatine. soaked In one-quarter cup of cold water dissolved over hot water, folded, in. with . whipped cream. The charlotte should be chilled until firm. It will serve six to eight people. CONSERVE CAREFULLY is the word these days, and here are a few hints on how to practise it.
