But the increase is not only in the top grade birds,, there are more grade Cs too and, since Canada's export markets are built on a reputation for quality food products, the surplus grade Cs stay at home. At present there are unusually- large numbers of grade C chick-, ens on Canadian markets and they offer a real bargain to the wise shopper and the clever cook. A yellow grade tag id-' entifies these birds; they will not have such good appearance or 4e so plump as birds that carry the red A or the blue B tag. neither will they be so expensive. For chicken stews, pies, fricassees and for brazing they are excellent buys. The Consumer Section of thej Dominion Department of Agriculture gives directions for cutting up a chicken and. recipes particularnly suited to grade C birds. To Cut Up a Chicken 1. Clean, wipe and singe the chicken. 2. Separate legs from body, cutting through the thigh join. 3. Separate drumsticks from thighs at knee joint. 4. Remove wings, .Cut through skin around the wing, close to body, pull the wing back to disjoint, then separate. Cut off Up of wings and use in soup or gravy. 5. Cut through ribs on. either side to separate back from breast. Split back In half crosswise, cut each piece in half. C. Cut breast bone with shears so that it can be divided in hair ISraised Chicken 1 chicken, about 4 lbs. cup flour. 1 teaspoon salt. 3 tablespoons mild-flavoured fat. Vz cups hot water or scalded milk. Remove browned chicken to a casserole, sprinkle with salt, pepper and paprika. Dot each piece with a bit of fat, add the water and cover closely. Bake Jn a moderately slow oven, 325 degrees F, for 1V2 to 2 hours, or cook in a heavy pan on top of the stove. Remove chicken to a hot platter and surround with a ring of buttered noodles.
