CHRISTMAS CANDIES When you thought of gathering a supply or Christmas goodies this year you may have decided that candy was still out of the question, that while the present sugar ration was maintained the family would have to make do with the small quantities of commercial sweets available. But the children especially love their Christmas candy and varieties which make large use of popcorn are a treat a well as being easy on small digestions and also on the sugar and butter supply. Popcorn 'balls, made with molasses, require M cup of light molasses, cup of sugar, 4 cup of water, "4 teaspoon of vinegar, teaspoon salt, W2 tablespoons of butter and six cups of pepped corn. Combine molasses, sugar, water, vinegar and salt. Cook slowly while stirring until a small quantity will separate into heavy threads when dropped into cold water. Remove from heat and add butter, stirring only enough to mix. Pour over the popped corn, stirring constantly and shape quickly into balls. Butterscotch may be used instead of the molasses taffy recipe but It requires more sugar. For butterscotch balls, yielding about twice as much as the previous recipe, you need one cup of sugar, ,i cup of .firmly packed brown sugar,' Vi cup of butter, 1 tablespoon of vinegar, 2 tablespoons of boiling water, i pinch of salt and 10 to 12 cups J of popped corn. Combine the sugars, .butter, vinegar, water tind salt. Cook slowly stirring constantly, until the mixture! boils, then boll slowly, stirring until heavy threads will form when a small quantity is drop MUFFS . . . to complete the little Miss's Christmas wardrobe. Commercially prepared puffed cereals may be used in these recipes instead of popped corn. PEANUTS NUTRITIOUS When you are shopping around for Christmas confections keep your eye out for peanuts. The nuts take high marks as Drovld ers of protein and niacin, the antin-peKagra vitamin. A round tablespoon of peanut butter contains a third of the protein contained in an average serving of meat, and the regular IVB-ounce package of roasted peanuts contains one half. Peanuts are listed in Canada's Food Rules as a meat alternate for this reason.
