The Experts Say - - It may be a little early to pick fruit and vegetables from your victory garden, but you don't have to get along without greens. because whether wild or grown in the garden any season ir greens season, Dr. h. B. Pett, head of the Health Department's nutrition division, states. Greens, including the free, wild ones like lambs' quarters, purs lane, dock, pokeweed and dandelions, are especially valuable for their contribution of vitamins, Including vitamin C, to the diet. Pokeweed, for example, has twice as much vitamin C as spinach, and dock pigweed, wild mustard, lambs' quarters and Russian thistle are particularly rich in carotene, a source of vitamin A. Dandelions, because of their flavor, make an especially good mainstay for a tossed green salad. Wash the dandelion greens in several waters, drain thoroughly and sprinkle lightly with salt and pepper, toss In a bowl with French dressing. Quartered tomatoes may be served with the greens. Hidden hunger is an ugly expression. It Is an uglier condi tion, however, and 'it attacks people who have slipped into'i the rut of eating just to satisfy the appetite -without paying at tention to the needs for health, and they may be starving although they seem to be well-fed. If the wrong foods are eaten long enough hidden hunger will cause trouble and the Nutrition Division lists a few of them as susceptibility to respiratory dis eases, constant tatigue, insomnia, inability to see in the dark, horny or rough skin, constipa tion, frequent headaches. One of. the objectives of the project Is to learn ways to foster emotional stability. The program begins with babies borii In 1944 and Is sponsored by the Mayo Foundation of the University ofMliV-nesota under direction of Dr. 'nderson Aldrlch,' former head of" the Chicago Children IJospltal, and president' ot the, American Pediatric Society. The Rochester ljealth department and public schoojs and various departments of the university are co-operating. "We live in a democracy which we are fighting to preserve," says Dr. Aldrlch. 'The children now growing up will be its leaders me tuture. uut we cannot expect to riaye successful lead ers In a democracy unless they ure emotionally stable enough to stand oh their own feet and give and take freely with their fellow men. "This required emotional sta bility must stem from a basic security and confidence, the kind that grows up from child hood, it does not seem im passible that human nature may have more co-operation aspects than we have hitherto thought possible. We can make a start at finding this out by applying the wholesome principles of grbwtli to Infant and child care." Five-Stage Program The program will be carried on in five stages pre-natal care, hospital care at birth, babyhood, pre-school, and school age. All children will be given health supervision based on growth needs of the individual child. At all stages, Dr. Anderson says, children will be given the benefit of latest developments In the field of pediatrics and child learning habits. He mentions specifically the observation that children can be taught certain subjects more easily when they reach an appropriate stage of mental development than at a specific age dictated by custom. "Research has been started," he says, "to see If we can correlate the muscular tension of newborns with their emotional behavior. "We expect to carry these observations on as the children grow up, to establish whether or not dynamic personalities are born that way and can be diagnosed at birth." "Rochester," says Dr. Aldrlch, "provides an unusual opportunity for this sort of program. "Practically all of the chil dren born In the city are under uniform medical supervision. Ninety-five per cent of them are bom in one hospital under the care of clinic obstetricians, and are seen both In the neonatal and well baby stations by pediatricians." iii:koini: op blitz LONDON Oi Whcn'she joined the National Fire Service in J!j42 Fircwomah Ivy Wright of Ilfoid had never driven a car.
