These ugfgestkiH are also handy to give the man of the family if he b going to preside over the flatter. First consideration is to have the platter large enough to give the carver room to work. Provide him with a well-sharpened, long-tolade carving knife, a carving fork, a serving spoon for dressing and a small side plate on which to put legs and wings. The steps in curving follows: 1. Place bird on platter with neck to carver's left side. 2. Carve nearer aide of bird first. 3. Place fork in bird, point ing to the rear, halfway along breast on far side of bird. 4. Remove leg by making cut through skin between body and thigh and around the hip Joint. Disjoint leg at socket with tip of knife. Transfer to small platter and separate thigh and drumstick. Cut up for serving. 5.
