Home economists suggesci three puddings for the last scene j of winter dinners. by Cranberry Vuiding 2 cups cranberries V cup brown sugar Vi cup molasses 1 Vi cup boiling water xh teaspoon salt 2 -teaspoons toaking oda is Vz cups all-purpose flour Wash and halve, cranberries. Add sugar and molasses. Let stand 1 -hour. Add boiling water. Sift salt and baking soda with flour and add to other mixture, beat well. Pour into greased custard cups. Set cup in a pan of hot water. Cover and: bake in a moderate oven, 350 degrees F., for 1 hour- Serve with pudding tsauce.. Six of servings. Molasses )mon Pudding , 4 tablespoons cornstarch-2 tablespoons sugar 1 teaspoon salt 1 Vi cup cold water Vz cup molasses V2 cups boiling water 2 egg yolks 2 tablespoons butter Juice and rind of 1 lemon 2 egg whites Combine cornstarch, sugar and salt with "cold water. Stir until smooth. Add boiling water and molasses. Cook until thick. Add beaten egg yolks, lemon Juice, rind and butter. Fold in the stiffly beaten egg whites. Cool. Six servings. Mincemeat Upside-Down Pudding lz cups sifted pastry flour OR lib cups sifted all-purpose flour 2'2 teaspoons baking powder Vi teaspoon salt 3 tablespoons shortening 14 cup granulated sugar 1 egg, well beaten Vz cup milk 2 cups mincemeat Sift together dry ingredients Cream shortening slightly, mix in sugar and add egg. Blend welk Add dry Ingredients, al ternately with milk, to make a rather thin drop batter. Decorate the bottom of a -well greased pudding mould with a few toasted almonds or other nutmeats. Add mincemeat. Fill mould two-thirds full with batter. Cover and steam over rapidly boiling water for 134 hours. Turn out and serve hot with hard sauce or a hot pudding sauce. Six servings. Jelly Sauce 2 cup grape jelly 1 cup boiling water IV2 tablespoons cornstarch 2 tablespoon; cold water Pinch of salt 1 teaspoon lemon juice 1 tablespoon butter op-tional) Melt jelly in boiling water. Stlt over low heat until melted, Blend cornstarch and cold water to a smooth paste. Add slowly to melted Jelly. Cook over low heat, stirring constantly until clear and thickened, about 5 minutes. Add salt and lemon, juice, and butter if desired. Yield: Hi cups sauce. Scene of Winter I D , II new Recipes APPRECIATION FROM FRANCE Local Woman Hears From Sister of Arrival of Clothing Shipped From Canada Keen appreciation of the clothing which was contributed Canadians for the needy people of Europe as a result of the national collection which was conducted a few weeks ago in Prince Rupert as -well as elsewhere throughout the Dominion expressed at first hand in a letter received by Mrs. V. M. Hansen, Summit Apartments, from her sister, Mme. Andre .La Brousse of Rochefort-sur-Mer, Charante Maritime, France, a city on the Bay of Biscay. Mme. LaBrousse was. a member of .a ladles' committee in her city which was .responsible for the preparation and, distribution the clothing "pour le soulage-ment des enfants malheureuse." In her letter to Mrs. Hanson, Mme. LaBrousse tells how these women of Rochefort-sur-Mer got the clothing in readiness after Its arrival in. large boxes and saw to its distribution where it could best toe used. And it filled a great need among people particularly children who were indeed grateful for these gifts from Canada. Mme.
