Mrs, Van Oestdam, was here after a. holiday trip, to Alaska. "Prince Rupert lodge is twice as large and far more active than Is the Regina lodge," she said. "And Regina is a city of G5,G00." Membership in the local men's lodge is about 250 while the Women of the Moose chapter here has, an enrolment of almost 200. Mrs. Van Oestdam was guest of honor at a function held in 1 the Moose Temple on Tuesday night following the Lodge's regular, meeting. There are many strawberry desserts which meet all these requirements and have become the delight of both the hememaker and her family. Large strawberries, because of their size and, general attractive nefs, are preferred for dessert purposes. Turn into a moistened sr slightly greased mould and hill until set. Unmould on serv ing plate and garnish with whip ped cream and whole strawher- vies. Six servings. Strawberry Ice Cream llA cups milk 2 egg yolks, slightly beaten Vj cup sugar 1 tablespoon flour Va teaspoon salt 1 cup crushed, fresh strawberries (sweetened) 2 egg whites, stiltly beaten 1 cup whipping cream Scald milk In top or double boiler. To egg yo:ks add the sugar, flour and salt. Add a small quantity of the scalded milk, biend well and return to remain- clean, fright look and bs a fulil1"2. mllk" Cok ,untl! solid red color. Cool and add the crushed strawberries. Pour into freezing tray and freeze to a mush. Remove from refrigerator and fold in egg whites and whipping cream. Return to refrigera-tpr. and freeze unt'l firm 3 to 3 hours. Six to eight servings. Strawberry Sponge 1 tablespoon gelatine , cup cold water Vx cup boiling' water Vz cup sugar 1 cup strawberry Juice and pulri 1 tablespoon lemon juice ' 2 egg whites . i,i cup whipping cream Soak gelatine in cold water for 5- minutes and dissolve In bollng water. A:Jd sugar, fruit Juice and pulp. Chill and when partially set, fold In whipped cream and egg whites, stiffly beaten.
