The edible portion of both is about 4 or 5 inches from the tip. When the lower stalks are pithy, with hollow places, the asparagus has probably been cut so lonj that the juices have dried up. Bud ends that have opened slightly are, an indication of over maturity. Wilt- ed spears are easily detected. 'Asparagus that is not fresh will be stringy and flavourless when cooked. The stem should be cut or broken off, a little at a time until the juicy section is reached. Because asparagus grows so close to the ground it is necessary to wash it very thoroughly to make sure there are no particles of sand under the scales. It is usually necessary to remove the scales as particles of grit cling beneath them. Tender asparaaus should not need to be scraped. , Asparagus heads are extremely tender and therefore easily broken, so the spears should be the tips up. The tall top of the double boiler makes a good asparagus cooker. Some hnme-makers purchase an enamel coffee pot for this purpose exclusively. The water is never fallowed to cover the tips, rather let thr: lower part of the stalks boil in the water, while the tips steam. Salt, added at the beginning of cooking, tends to toughen the asparagus so It is bettor to add it after the first 10 minutes of cooking. The water from cooked asparagus is one exception to the oft-repeated rule "save the vegetable water." It is apt to be acrid in flavour.
