Today our total annual catch of fresh water, salt water and shellfish amounts to around two billion pounds and has an estimated market value in the neighborhood of $200 millions. This. in turn means the investment of millions of dollars in boats, equipment and processing plants, as well as the employment of thousands of men and women, We can all be proud of this great industry. And what better time to spotlight it than in September when prices are low after the abundant summer catch, much of which has been frozen or canned for our year ’round enjoyment, The recipes on this page are representative of some of the major forms in which fishery products are marketed and have been supplied by the home econ- omists of Canada’s Department of Fisheries.
