' Any kind of cherries can be used in this recipe with the exception of wild arid chokeberries. Four cups (21bs.) prepared fruit 1 bottle fruit pectin, 7. cups (31bsi susar, ty cup lemon juice. To prepare fruit, pit about 2'2 pounds fully ripe cherries. Crush thoroughly or grind. Add V4 ,cup water and Vi cup lemon Juice, bring to a boil, cover, and sim mer 15 minutes. (For stronger cherry flavor, add V teaspoon almond extract before pouring) Measure sugar into large kettle Add prepared fruit, packing each cup solidly and filling up the last cup with water, if necessary. Mix well and bring to a full rolling boll . over hottest fire. Stir constantly' before and while boiling. Boll hard 5 minutes. Remove from fire and stir in bottled fruit pectin. Then stir and skim by turns for Just 5 minutes to cool slightly and prevent floating fruit. Pour quickly and paraffin hot Jam at once. Makes about 11 glasses (G fluid ounces each).
